Keep your passport and bank cards on you at all times.
Never let them take and keep your, passport or other documents. Place seems clean and tidy, free supper available. Staff seem to be friendly at first, this place is not as it first appears, other "customers" seem to be also family members, and they seem to fill your dorm up with others who already know each other. which seemed really strange since we should have all been complete strangers to each other. If you are only staying a night, keep your important documents on your person, even going to toilet or taking a shower, do not leave them or put them out your sight ever while here.

Illegal workers who stole and attacked. Dirty and Dangerous place. Stay away from this filthy place and you don't know what you are eating, even though it sounded good you get free supper. Rude owners (the older man). Dirty moldy place with dirty sheet, no blanket. Risk your belongings getting stolen because illegal cleaning ladies stole and the police couldn't do much because the owners denied that. Very violent place. Safety not guaranteed.
I stayed there twice and find that the staff was extremely nice and helpful the rooms and toilets were very clean and it is central to all sites and very cost effective. will recommend to anyone.
Location excellent, great staff, cleanliness, safety lockers
I stayed almost 2 weeks in this historical place because of its location. Close to the most important holy sites, it's a time saver. Staff are friendly and very respectful, security lockers available, cleanliness is ok and kitchenette available for your cooking needs. I'll tell all my friends to stay there and relax, chiefly in the roof with a view to the Holy Sepulcher Church. There is no breakfast because many restaurants are available in that street. The most important is the staff make you feel at home.
My trip to Israel really turned with my stay at Hebron Hostel. I loved the old building. I meet so many fun and interesting people both among the staff and among the visitors. The tee bar at ground floor is a perfect place for good conversations. Ask for a sheet if you haven't brought your own.

Not so bad, but staff unfriendly
The hostel itself is not so bad, but the staff are quite unfriendly. It seems to be family run hostel, the family is english speaking (not local). This would usually be a good sign, but I did not like the atmosphere in the hostel. Also the WIFI did not work properly (possibly due to the thick stone walls of the old building). On the other hand, I have stayed in much worse hostels in Jerusalem. Also, there is a nice cafe/internet/restaurant in the basement (separate, not part of the hostel).
