The Hans Christian Anderson museum is pretty interesting. You won't learn much about the fairy tales, but you'll get a feel for the man himself. He was pretty amazing! The streets of Odense are beautifully maintained. Watch out for bikes, there are thousands! Walk or bike alongside the river in summertime, it's beautiful!
