"If you're looking for the opportunity to spend the night in an honest-to-goodness hundreds of years old castle, then Foulksrath Castle is the place. Foulksrath Castle is located in the country twelve kilometers outside of Kilkenny and is serviced by two buses Monday to Saturday (from Kilkenny in the afternoon and to Kilkenny in the morning). Taxis are also available (about twenty euro one way). Because of its location, it's not the ideal place to stay if you're looking for nightlife or much activity.
